Sexy Chicken

Okay, sexy chicken might be a stretch, but what I have for you here are some really tasty, really nutritious chicken dishes! Chicken doesn’t need to be boring anymore. Enjoy these dishes this week!

Pollo con Salsa Rosa

• 3 pounds boneless, skinless chicken thighs
• 1 can tomato paste
• 1 white onion, chopped
• 5 stalks celery, diced
• 5 carrots, diced
• 1 cup cilantro leaves, diced
• 2 jalapeno peppers, diced
• 1 bulb garlic, diced
• Juice of 1 lemon
• 1 ½ tsp. black pepper
• 1 ½ tsp. salt

1. Place all of the ingredients in a slow cooker and cook on low for eight hours, stirring once or twice.

Jerk-Style Grilled Chicken Thighs

• 2 pounds bone-in, skin-on chicken thighs
• 1 Tbsp. olive oil
• 1 Tbsp. jerk seasoning (ground-spice blend)
• Salt to taste

1. Pre-heat a grill.
2. Combine all of the ingredients in a mixing bowl.
3. Grill the chicken thighs over medium heat for three to five minutes on each side, until the juices run clear.

Turmeric-Caraway Grilled Chicken Breasts

• 2 boneless, skinless chicken-breast halves
• 1 Tbsp. olive oil
• 1 Tbsp. ground turmeric
• 1 Tbsp. caraway seeds
• Black pepper to taste
• Salt to taste

1. Pre-heat a grill.
2. Combine all of the ingredients in a mixing bowl.
3. Grill the chicken breasts over medium heat for five to six minutes on each side, until the juices run clear.

Hearty Potato-and-Chicken Frittata

• 6 eggs
• 1 onion, trimmed and chopped
• 2 cloves garlic, diced
• 2 Tbsp. parsley leaves, diced (or dried parsley)
• 2 potatoes, previously steamed, cut into ½-inch cubes
• 1 cup previously cooked chicken, chopped
• 1 Tbsp. olive oil, coconut oil, butter, or ghee
• Black pepper to taste
• Salt to taste

1. Heat the oil, butter, or ghee in an oven-safe fry pan.
2. Scramble the eggs with black pepper and salt to taste.
3. Add the onion, garlic, and parsley to the pan and cook them over medium heat until they’re soft.
4. When the onion, garlic, and parsley are about three-quarters cooked, add the potatoes and chicken and mix everything together.
5. After two minutes, add the eggs.
6. When the eggs are set on the bottom and about to set on top, place the pan in the oven and broil for three or four minutes until the frittata is lightly browned and fluffy.

Minestrone Soup with Chicken

• 8 cups water
• 2 pounds boneless, skinless chicken thighs
• 4 carrots, diced
• 4 stalks celery, diced
• 1 red onion, diced
• 8 shallots, diced
• 8 mushrooms, diced
• 1 cup pea pods
• 1 bulb fennel, diced
• 3 tomatoes, chopped
• 1 can tomato paste
• 2 jalapeno peppers, diced
• 1 bulb garlic, diced
• 2 bay leaves
• 1 ½ tsp. black pepper
• 1 ½ tsp. salt

1. Place all of the ingredients in a slow cooker and cook on low for eight hours, stirring once or twice.
