Get Your Salad On

A terrific salad is a great way to make any dinner table really visually appealing and nutritious at the same time. Here are several salads to try this week!

Reimert Salad
• 1 head Boston lettuce, trimmed and chopped
• 1 tomato, trimmed and chopped
• 1 cup mushrooms, trimmed and chopped
• 5 stalks celery, trimmed and chopped
• 1 tomato, trimmed and chopped
• 1 cup goat cheese
• 1 can (15 ounces) kidney beans
• 1 cup pine nuts

Beet-Greens Salad
• greens from 10 beets, chopped
• 5 stalks celery, chopped
• 1 cucumber, chopped
• 1 yellow bell pepper, chopped
• 5 radishes, chopped
• 1 avocado, chopped

Greens ‘n’ Fruit
• 5 cups mesclun lettuce
• 1 navel orange, separated
• 1 cup strawberries, halved
• 1 cup red grapes, halved
• ¼ red onion, diced
• ¼ cup almonds

Harvard Salad
• 1 head green-leaf lettuce
• 5 stalks celery, trimmed and chopped
• 2 carrots, trimmed and diced
• 10 cherry tomatoes, halved
• 1 orange bell pepper, trimmed and chopped
• 1 cup feta cheese
• ½ cup sunflower seeds
• ½ cup pine nuts
• ½ cup macadamia nuts

Arugula with White Beans and Seeds
• 5 cups arugula
• 1 cucumber, trimmed and chopped
• 1 tomato, trimmed and chopped
• 5 radishes, trimmed and chopped
• 1 yellow bell pepper, trimmed and chopped
• 1 can (15 ounces) white beans
• ½ cup sunflower seeds
• ½ cup pumpkin seeds
• ½ cup pine nuts
• 1 Tbsp. flax seeds
