New Week–Teriffic New Recipes!

Enjoy some delicious meals this week using these Goot’s Diet recipes:

Sautéed Spinach with Black Beans and Sunflower Seeds

• 8 cups spinach, chopped
• 1 can (15 ounces) black beans
• 1 cup sunflower seeds
• 2 Tbsp. olive oil or coconut oil
• 1 clove garlic, diced (optional)
• Black pepper to taste
• Salt to taste

1. Heat the oil in a sauté pan or fry pan.
2. Add the garlic (optional) and cook it over medium heat until it’s tender.
3. Add the spinach and cook it until it’s wilted.
4. Add the beans and sunflower seeds, mix the spinach, black beans, and sunflower seeds together, and cook the mixture until it’s hot.
5. Add black pepper and salt to taste (optional).

660 Salmon Burgers

• 2 pounds salmon, skinned and cut into 1-inch chunks
• 4 scallions, diced
• 1 cup black olives
• 3 Tbsp. dill, chopped (or dried dill)
• Zest of two lemons
• 4 Tbsp. olive oil, coconut oil, butter, or ghee
• Black pepper to taste
• Salt to taste

1. Place the dill, scallions, and olives in a food processer and pulse until finely chopped. Transfer to a mixing bowl and mix in lemon zest, salt, and pepper.
2. In a few batches, place the salmon chunks in the food processer and pulse until finely chopped. Combine the salmon with other ingredients in mixing bowl.
3. Make six to eight burgers from the mix.
4. Heat the olive oil/coconut oil/butter/ghee in a sauté pan or fry pan.
5. Cook the salmon burgers over medium heat for a few three to six minutes on each side, until they’re browned on the outside and cooked on the inside.

Roasted Mixed Beets

• 1 cup red beets, chopped
• 1 cup yellow beets, chopped
• 2 Tbsp. olive oil
• Black pepper to taste
• Salt to taste

1. Pre-heat an oven to 400 degrees.
2. Mix all of the ingredients together in a mixing bowl.
3. Roast the beets in a roasting pan for 40 minutes or until they’re tender. Stir the beets after 20 minutes of cooking.

Pollo con Salsa Rosa

• 3 pounds boneless, skinless chicken thighs
• 1 can tomato paste
• 1 white onion, chopped
• 5 stalks celery, diced
• 5 carrots, diced
• 1 cup cilantro leaves, diced
• 2 jalapeno peppers, diced
• 1 bulb garlic, diced
• Juice of 1 lemon
• 1 ½ tsp. black pepper
• 1 ½ tsp. salt

1. Place all of the ingredients in a slow cooker and cook on low for eight hours, stirring once or twice.

Cumin Mashed Potatoes

• 4 potatoes, quartered
• 2 Tbsp. olive oil, butter, or ghee
• ¼ cup ground cumin
• Black pepper to taste
• Salt to taste

1. Place potatoes in a steamer basket.
2. Boil water and steam the potatoes until they’re soft.
3. Combine the steamed potatoes and other ingredients in the pot after dumping out the water and mash the mixture with a masher or fork.
