Today’s I THRIVE Challenge
I had a fantastic brunch on Sunday. I had salad, a scramble, and some leftover potatoes and vegetables from Saturday night’s dinner. It was really delicious. It also contained 11 vegetables. The salad had mesclun lettuce, cucumbers, radishes, and tomatoes. The scramble had green, red, and yellow bell peppers, onions, and mushrooms. The leftovers had zucchini and dandelion greens. On Wednesday, for this I THRIVE Challenge, include as many vegetables as you can in breakfast lunch and dinner. See how many you can include in each meal and in the day as a whole.
