Channel Your Inner Chef

The weekend is a fantastic time to get in the kitchen and cook some delicious meals for yourself and your family and friends. Here are a few of my recent favorite recipes for you to play with this weekend. Have fun!

Positive family preparing lunch together

Eastern Prom Ratatouille

• 1 white onion, chopped
• 1 zucchini, chopped
• 1 summer squash, chopped
• 1 can (15 ounces) diced tomatoes
• ½ cup basil, diced
• 1 clove garlic, diced
• 2 Tbsp. coconut oil or olive oil
• Black pepper to taste
• Salt to taste

1. Heat the oil in a sauté pan or fry pan.
2. Add all other ingredients except for the tomatoes and basil and cook the mixture over medium heat until the vegetables are fork tender.
3. Add the tomatoes and basil, stir everything together, and cook the mixture on medium heat for 10 minutes to let all the flavors come together.

Sautéed Kale with White Beans

• 8 cups kale, chopped
• 1 can (15 ounces) white beans
• 2 Tbsp. coconut oil or olive oil
• 1 clove garlic, diced (optional)
• Black pepper to taste
• Salt to taste

1. Heat the oil in a sauté pan or fry pan.
2. Add the garlic (optional) and cook it until it’s soft.
3. Add the kale and cook them until they’re wilted.
4. Add the beans, mix the kale and beans, and cook them until the mixture is warm.
5. Add black pepper and salt to taste (optional).

Hearty Potato-and-Chicken Frittata

• 6 eggs
• 1 onion, chopped
• 2 cloves garlic, diced
• 2 Tbsp. parsley leaves, diced
• 2 potatoes, previously steamed, cut into ½-inch cubes
• 1 cup previously cooked chicken, chopped
• 1 Tbsp. olive oil, coconut oil, butter, or ghee
• Black pepper to taste
• Salt to taste

1. Heat the oil, butter, or ghee in an oven-safe fry pan.
2. Scramble the eggs with black pepper and salt to taste.
3. Add the onion, garlic, and parsley to the pan and cook them over medium heat until they are soft.
4. When the onion, garlic, and parsley are about three-quarters cooked, add the potatoes and chicken and mix everything together.
5. After two minutes, add the eggs.
6. When the eggs are set on the bottom and about to set on top, place the pan in the oven and broil for three or four minutes until the frittata is lightly browned and fluffy.

Spicy Carrot Soup with Black Beans

• 1 cup water
• 10 carrots, chopped
• 1 can (15 ounces) black beans
• 1 Tbsp. ground cumin
• 1 tsp. chipotle powder

1. Place carrots in a steamer basket.
2. Boil water and steam the carrots until they are very soft.
3. Place water and the steamed carrots in a blender and blend them until they are mashed up thoroughly.
4. Place the blended carrots in a saucepan, add the black beans and spices, and cook over medium heat for about five minutes or until the soup is hot.
